Elaichi Tea, Indian Cardamom Tea


In India, Chai is one beverage that transcends all seasons. Even in the sweltering summer, when you do not feel like having anything hot, everybody yearns for a cup of milky tea to boost their senses!

And when that tea is perked up with flavourful and aromatic cardamom, it is all the more exciting to the taste buds. Enjoy this tea hot and fresh with your favourite savouries, over the company of good friends, and it becomes an experience to remember.

Preparation Time: 7 mins   Cooking Time: 4 mins   Total Time: 11 mins     Makes 2 servings

Ingredients
1 1/2 tbsp tea leaves
2 1/2 tbsp sugar
3 crushed cardamom (elaichi)
1 cup milk

Method
    Combine 1 cup of water, tea leaves, sugar and cardamom, mix well and boil on a medium flame for 3 minutes.
      Add the milk, mix well and boil on a medium flame for 3 to 4 minutes, while stirring occasionally.
        Serve immediately.

        Orange Brown Sugar Sweet Tea

        #1: Grab the vegetable peeler and an orange and let’s get started.  Hold the orange firmly in one hand and, with the other hand, cut away the orange peel (the very outer, orange skin of the orange).  If you get a little of the white peel, the pith (remind anyone of Ethel Thayer?) it isn’t a big deal. #2: “Muddling”.  All it means, in this instance, is to mash an orange slice into the tea.  Right before serving the tea, place one half of an orange slice in the bottom of each glass and muddle, or mash, the orange to release the juice and oils.  Since I don’t own a muddler, I use the rounded end of my wooden spoon.  Muddle with slight force; just a couple of pushes and twists should be enough.
